La Table du Caviste Bio, the restaurant that combines gastronomy and epicureanism

Lovers of bistronomy and healthy cuisine are in for a treat at chefs Junko Kawasaki and Dominique Bry's new restaurant, La Table du Caviste Bio, in the 17th arrondissement. A restaurant that adds a philosophical dimension to the pleasure of eating organic.

When gastronomy meets philosophy and the pleasure of healthy eating... That's what the restaurant La Table du Caviste Bio, founded by chefs Junko Kawasaki, Dominique Bry and his wife Carmen, offers in the capital's 17th arrondissement. The restaurant is not far from another wine bar, Amici, and offers 100% organic cuisine, respecting the produce sourced from local organic markets and Japan, for a harmonious blend of flavors.

The meal is always accompanied by an organic wine suggested by chef Dominique Bry, who also runs an organic wine cellar, Caviste Bio, in the 9th arrondissement, rue de Maubeuge. Lalande de Pomerol 2009, rosé de Provence from Château Sainte-Marguerite... the chef who knows how to advise gourmets who don't necessarily know how to choose the right wine to go with the chosen dish. In the kitchen, young Japanese chef Junko Kawasaki reigns supreme. The young woman is in love with Paris and its gastronomy. A declaration of love that is always reflected on the plate, and a cuisine that aims to be a skilful blend of French gastronomy and the exotic flavours of her native Japan.

The program includes a weekly lunchtime menu with a choice of three starters, three main courses and three desserts of his own creation, including a vegetarian dish. In the evening, the menu is a little more elaborate. Highlights include bonito tataki (a Japanese dish of lightly cooked and marinated fish), mackerel and ginger sushi marinated in vinegar, butternut velouté and chicken supreme stuffed with chanterelle mushrooms. On the dessert side, his matcha tea crème brûlé and chocolate quenelles are to die for. Or let yourself be tempted by a plate of 3 to 5 organic cheeses, composed by the Japanese chef. An inventive cuisine for lovers of good, healthy food for body and mind.
