As a starter, the Swiss chard ravioli caught our eyes and we are happy it did. Vegetables are worked several fashions: the fresh Swiss chard chlorophyl dough encloses the candied vegetable. It rests on broiled Swiss chard with flavorful parmesan milk for some incredible hints but the dish is not too salty or too strong. Perfect to whet the appetite and make us hop up and down for the rest.

As for mains, we fell for the roasted John Dory served with barbecued and slightly grilled artichoke tartlet, very tasty. We also had some mashed artichoke with Saint-Pierre salt for which the fish bones are retrieved, then grilled, and smoked over the BBQ, then mixed with salt to flavor it. The John Dory is covered in barigoule, a condiment based on artichoke. Then again, the vegetable comes in several ways for a complete culinary experience.

As for meat lovers, get the suckling pig worked several ways. Enjoy the cutlet, the belly and mushrooms stuffed with pork crémeux.

And careful though, do not switch straight to dessert without having some cheese! It will not disappoint! If beautiful Parisian locations used us to discover great references, Chiberta pushes the experience further by revisiting the traditional cheese tray. On the occasion, we had the occasion to enjoy some Sainte-Maure from Touraine ice cream, creamy and refreshing, with some crunch brought by a Sainte-Maure tuile and poppy seeds. Perfect on warmer days!

And here comes sweet-toothed’s favorite moment: dessert! At Chiberta, you cannot close your meal without the great finale. If you want to think outside the box, do not miss the beetroot pomegranate pairing. Made of several layers, this dish reveals beetroot candied in its own molasse, as yummy as a candy with pomegranate panna cotta, low in sugar, covered in fresh seeds to balance it all. Irwin and his team get the skin of the pomegranate to powder it and sprinkle the tuiles covered in ewe’s milk ice cream covered in lemon jelly for a lovely and peps touch. What a discovery!

The warmer weather also encouraged us to taste the strawberry-jasmine. It is a surprising revisit of the pavlova, telling clichés to get lost. Some strawberry-basil sorbet relies on meringue encasing jasmine crémeux and strawberries several ways: compote, pickled, jellied… and to break the sweetness of the meringue, Chiberta has found a clever trick: strawberry essence served on the side to rinse the palate!
