You may have heard about Table du Recho, a solidarity-driven restaurant in the 16th arrondissement. And now, the association enjoys a new location: Bal Café par le Recho, set within the Le Bal exhibition venue in the 18th arrondissement. A new place to “restore the world by feed Humankind”, according to Recho!
Loyal to Recho’s project mixing cuisine and hospitality and unconditional support, BAL Café par le Recho becomes an integration restaurant within which are supported refugees willing to be introduced to ethic and militant cuisine.
On the menu, market’s cuisine concocted with organic, farm and local produces, farmed by committed men and women. Here, food is committing with the environment, making sure carbon footprint is as low as possible, and giving pride of place to plants whilst significantly cutting down waste whilst recycling them too.
Whilst waiting for the arrival of the future chef who will arrive this Fall, the BAL par le Recho offers from June to September residencies to young and talented chefs for two to three weeks. Each one of them will be given free rein to be inspired and try managing a place, supported by the team staff made of integrated refugee cooks.
The first residency, from June 2 to 12, 2022, is given to Toko Essom, a young chef from Cameroon who was trained at the Prince de Galles and Plaza Athénée, who draws inspiration from his travels to serve world cuisine, always accompanying the seasons. He will cook at the BAL Café for two weeks, helped by Hashmat – a cook from Afghanistan – integrated within the Recho for almost a year.
