For this Christmas 2017, InterContinental Paris Le Grand executive chef, chef Laurent André came up with two sweet/savory yule logs inspired by the thirteen Provençal desserts in which walnuts, almonds, raisings and other oriental fruits are highlighted.
In terms of savory treat, we discover a very beautiful and delicious wreath made of a tryptic with pure duck foie gras, apricots and candied figs the whole topped with pistachios-hazelnuts sprinklers and covered in a delicate cocoa velvet.
Regarding the sweet log, a chilled wreath authentic from Provence with a light calisson mousse, moist dried fruits biscuits and a candied mandarin marmalade heart. To enhance the whole, the wreath is covered in pistachios sprinklers and clementine nougat.
And to make this Christmas 2017 even more magical, the Parisian hotel and perfumery Fragonard joined forced.
Fragonard created for Hotel InterContinental Paris Le Grand Christmas baubles inspired by the patterns from Grasse-based Musée Provençal du Costume et du Bijou [Provençal Museum of Costumes And Jewelry] and celebrating its 20th anniversary this year.
