On the menu at Le Donatello, a seasonal menu featuring market meats, fish and vegetables selected by chef David Archinard, who arrived at Le Dolce Chantilly in April 2016. Each season, the chef changes his menu according to his inspirations, and this summer, but always offering us a meat dish and fish in innovative recipes with remarkable presentation.
Take the starters for example: the duck and foie gras pâté en croûte melts in the mouth and is delicate, perfect for meat lovers who want to whet their appetites, while the breaded asparagus with corn petals and gribiche sauce will delight those seeking new culinary sensations. The portions are just right to whet our palates and whet our appetites, and with so much to look forward to, the pleasure only increases!
Looking at the 5 dishes that await us, we can tell that the chef is patient and has mastered the preparation of sauces! Indeed, the à la carte menu includes a pork shank effiloché, charcuterie jus and forgotten root chips; a lamb noisette stuffed with herbs, spring vegetables and navarin juice; a sea bream with basil, caponata Siciliana and jus; a shrimp ravioli with vegetables and a lightly spiced Espelette chili broth; and a pollack back in its bouillabaisse jus with romanesco cabbage, kale and broccoli.
Looking at the sea bream, you know it's perfectly cooked thanks to the broth that finishes it off, and the accompanying vegetables take you straight to the beach, so you take your time to savor it.
If we're no longer hungry, the flavors we've had throughout the meal urge us to have dessert, and between the chocolate millefeuille, raspberry ginger and chocolate raspberry ice cream, the strawberry tart, vanilla marshmallow shortbread, fromage blanc sorbet, verbena and the exotic, pineapple, coconut, mango sorbet, vanilla chantilly in their meringue, we melt.
