For the 2025 holiday season, Timothy Lam, the new pastry chef at Shangri-La Paris, presents his first Christmas log, the Fleur de Vanille, an exceptional creation available in a limited edition from December 1 to 31, 2025.

For his first holiday collection, Timothy Lam makes a splash at Shangri-La Paris with a sculptural creation: the Bûche Fleur de Vanille. Inspired by the Bauhinia—Hong Kong's iconic orchid flower and symbol of the hotel's eponymous restaurant—this delicate piece embodies the subtle dialogue between French elegance and Asian refinement that is the hallmark of the Palace.

Here, there is no ostentatious sugar... the Chef and his team focus on lightness. Immaculately white, the log looks like a piece of pleated, shiny silk, with an almost unreal delicacy. When tasted, the vanilla expresses itself in all its nuances. The soft vanilla biscuit yields gently under the spoon, before the milk jam brings a round and enveloping caress. The slightly roasted cream prolongs the sensation, warmer, almost woody, immediately refreshed by the light mousse—fine and melt-in-the-mouth. The vanilla crisp, meanwhile, cracks slightly under the tooth, awakening the whole with a textured note. And then there's the white chocolate shell, so thin that it breaks silently, allowing the vanilla to blossom until the very last bite.
