Claire Heitzler unveils her Néroli galette in Levallois-Perret for January 2026: a vanilla-frangipane with a hint of orange blossom, nestled within a golden, flaky crust. The pastry chef also offers a classic almond and hazelnut version.

Chef Claire Heitzler, whose workshop-boutique is located in Levallois-Perret, is delighting us with two King’s Cakes for January 2026. The star of this year’s selection is the Néroli Galette, celebrating the floral flavors that the pastry chef particularly loves. Join us as we explore these delicious creations in the Hauts-de-Seine area.

For this year's edition, CLAIRE Heitzler & Producers celebrates the orange blossom, a treasured ingredient of the pastry chef, paired with the comforting sweetness of vanilla. The Néroli Tart stands out with its crisp, golden flaky pastry, hiding a smooth, delightfully fragrant cream that’s both lightweight and luscious. The warmth of vanilla balances the intoxicating freshness of the orange blossom. This refined dessert offers a sensory journey through blossoming orange orchards. Priced at €45, this original King’s Cake serves six people and promises a memorable taste experience.

The traditional king cake is priced at 39 euros for six servings. This king cake with frangipane features a classic recipe with its almond and hazelnut cream, offering a delightful symphony of flavors with every bite. Its puff pastry is light, crisp, and perfectly golden, creating a delectably airy texture. Inside, the rich and velvety frangipane reveals a subtle blend of toasted almonds and hazelnuts. Replacing sugar with brown sugar adds an extra touch of character to this iconic Epiphany treat. Each slice celebrates tradition with indulgence, turning the quest for the fève into a truly flavorful adventure.
