Urgent alert: eggs have vanished from Paris! Over the past few days, it’s become increasingly difficult to find eggs in the city’s supermarkets, and this isn’t the first time. Whether in small local shops or large stores, many no longer have eggs available. But what’s causing this essential source of protein to disappear from Paris? While the situation is challenging nationwide, it’s even more noticeable here due to high demand and the city’s dense population.
Alice Richard, director of the egg interprofession, explains to our colleagues at 20 Minutes that this egg shortage isn’t a new phenomenon and has been ongoing for several months, especially after the holiday season, describing it as "a tension in the egg market." In 2025, the average annual egg consumption per person increased from 226 to 240 eggs, according to the CNPO. With inflation on the rise, many French consumers are choosing to replace more expensive meat with eggs.
But our struggling hens are no longer keeping up! Between avian flu outbreaks and the declining number of chickens, the country is unable to meet its egg demand consistently. New poultry farms will need to be built in the coming years to address this shortage.
Meanwhile, if you're looking to use these eggs for anything other than an omelette, you might consider the options for vegetarians or those with allergies, by substituting with plain yogurt or aquafaba in your recipes!
