Everyone’s familiar with Myriam Sabet, the pastry chef behind Maison Aleph, a pastry shop established in 2017 that seamlessly blends Levantine flavors with the craft of French pastry. Born in Aleppo, Syria, Myriam was raised amid scents of orange blossom, jasmine, and pistachio before moving to Paris to chase her dreams. Her journey, spanning finance and pastry training through a CAP diploma, led her to craft innovative recipes that break away from the often greasy, overly sweet clichés sometimes associated with Middle Eastern sweets. For Valentine’s Day, she’s crafted a collection that, quite fittingly, is full of heart. The lineup features four pastry hearts for two at €22 each, all crafted on her signature butter-rich, crispy filo dough, caramelized layer by layer, a hallmark of her house. What truly stands out is this exceptional crispness that makes each creation stand out as uniquely hers.
The softest of the four options. Le Doux features a filling of fresh mango confit, topped with a velvety jasmine-infused cream, all resting on a bed of almond mousse. Upon tasting, we were captivated by the vibrant freshness of the mango and the delicate aroma of jasmine, accentuated by a hint of ginger that adds a perfect balance to each bite. An exquisitely gentle pairing that truly lives up to its name.
It's our little favorite, we have to admit. Le Raffiné strikes a delicate balance between the smoothness of Iranian pistachio, the tartness of raspberry, and the tenderness of rose. Beneath the rose ganache sprinkled with crunchy bits, you'll find a layer of pistachio cream, pistachio praline, and raspberry confit. Pistachio and rose lovers, this one is definitely not to be missed.
As its name suggests, this one is designed for those with a sweet tooth. Le Gourmand combines a smooth, salted butter caramel with a rich vanilla cream made from Madagascar vanilla, all resting on a velvety almond vanilla mousse. It's a classic choice—comforting, indulgent, and generously crafted—perfect for anyone who loves warm, comforting flavors.
Journey to the Levant with L'Envoûtant, a sensory trip featuring the aromatic richness of Iranian pistachio and delicate orange blossom. Made with pistachio cream, orange blossom ganache, and pistachio praline, all sprinkled with roasted pistachios, this is undoubtedly the most worldly of the collection. Close your eyes, and you're transported somewhere between Aleppo and Damascus.
This year's charming new sensation? DIY half-hearts to assemble yourself. The idea is simple and downright adorable: pick your half, then piece them together to craft your own unique heart. It’s a playful way to share a special moment with your loved one. The set goes for just 22 euros for the pair of halves.
For those who prefer chocolate, Maison Aleph also offers a praline-filled chocolate heart stuffed with almond or pistachio praline, priced at 17 euros for 120g. Perfect for declaring your love or simply spreading some joy.
