Recipe of the madeleines of Nina Metayer

Ingredients :
Sugar 166g
Flour 254g
Baking powder 14g
Vanilla pod 1 piece
Orange zest 5,6g
Whole eggs 184,6g
Honey 40g
Milk 76g
Butter 254g

Preparation:

Cook the butter in a saucepan without stopping to mix until it becomes nutty.

Sift the flour with the baking powder.

Mix the eggs with the sugar, add the flour and the baking powder, scrape the vanilla pod and add the seeds, the orange zest, the milk and the honey.

Butter the madeleine molds with butter.

Poach a small amount of the madeleine mixture into each mold.

Preheat oven to 210°C and bake for 5 minutes at 200°C
