Sweet waffles crafted by Maxime Frédéric and Sacha Vadier, alongside savory options from Arnauld Donckele and William Béquin, all served with a stunning panoramic view of Paris—it's a must-try.

The Cheval Blanc Paris is debuting its new Gaufrettes & Gourmets at the stylish brasserie Le Tout-Paris, perched on the 7th floor of the hotel in the 1st arrondissement, overlooking the Pont Neuf. Starting February 9, 2026, guests can settle in at the bar or on the balconies to enjoy an array of sweet and savory waffles crafted by chefs Maxime Frédéric and Sacha Vadier for sweet delights, with savory options overseen by William Béquin and guided by Arnaud Donckele.

For the savory options, the three waffles are gluten-free, made with , a thoughtful choice for those with dietary restrictions. They include a salmon, dill, and lemon cream version, a vegetarian option with radishes, horseradish, and herbs, and a final one featuring truffle, goat cheese, and rosemary. Richly topped and overflowing with generous fillings, these waffles are as much a feast for the eyes as they are to the palate.

We love the lightness of the batter and the freshness of the ingredients. A standout is the vegetarian version, which is both crisp and refreshing. The whole platter is served with a drink of your choice, priced at 55 euros. These savory creations bear the signature of William Béquin, the chef renowned across Paris, working under the guidance of Arnaud Donckele, a three-Michelin-starred chef at the helm of the gourmet restaurant Plénitude, located in the same hotel.

We shift gears entirely with the sweet versions crafted by Maxime Frédéric and Sacha Vadier. Maxime Frédéric, crowned World’s Best Pastry Chef 2025, continues to delight with his creations. There are three tantalizing variations: chocolate with rich chocolate sauce and cacao gel, hazelnut featuring praline and homemade spread, and vanilla paired with creamy caramel and dulce de leche.

The waffles aren’t heavy, despite their fluffy appearance. Crispy on the outside and delightfully light inside, they’re best enjoyed topped with rich vanilla whipped cream — absolutely decadent — or paired with the irresistible hazelnut spread from their menu that we love so much. Served plain, they reveal all their delicate flavors. Expect to spend about 40 euros for a sweet treat with a drink included.
