Pleincœur's ice-cream bar has just opened in Batignolles (Paris 17th). At Maxime Frédéric's bakery-chocolaterie, ice creams made to order and artisanal sundaes are prepared right before our eyes, to be discovered this summer 2026.

We set out to try Pleincœur’s brand-new ice-cream bar, and the verdict is in: we were won over (and came back for more). In the heart of the Batignolles, in the 17th arrondissement of Paris, the bakery-pastry-chocolate shop of Maxime Frédéric and its heart-of-the-family crew unveil their new summer counter: a genuine ice-cream bar has taken up residence inside the flagship. What does Pleincœur's ice cream bar offer?

The big draw here are the pastry-style ice cream sundaes. We start with an intense ice cream base, add a crispy, on-site praline, fresh fruit or caramelized dried fruit, and crown it with a fleur de lait Italian ice cream served on the spot. To take indulgence up a notch, a praline center or a sauce (fruit-forward or chocolate) nests in the middle. Four signature cups share the spotlight, at €8.50:

And since love is shared at Pleincœur, the house also tucks in one of its marshmallow bears, in mini size, to perfect these generous creations. Generous and utterly indulgent, these dessert cups lean fully into the contrast between melt-in-your-mouth softness, crunch, crispness and drippy sweetness. It’s ideal to enjoy on site, on the shaded terrace of about thirty seats, or to take away for a stroll to the Parc des Batignolles, just steps away.

Craving a classic? The ice creams range from vanilla, chocolate, pistachio, fleur de lait, hazelnut, cappuccino and matcha, while the sorbets lean fruity with strawberry, raspberry and apricot. Expect €3.50 per scoop, €6 for two, and €1 more for a pistachio praline, hazelnut praline, or chocolate sauce topping. Some may find these ice creams a touch pricey, but at the same quality they remain more affordable than many other artisanal options made from carefully sourced ingredients.

If these ice creams go down without guilt, it’s also due to the care taken with the ingredients. The milk, richly flavoured, comes from Corinne and Christophe’s Normandy farm and gives the ice creams their indulgent creaminess. The noisettes du Lot-et-Garonne from Laurent and Yannick are transformed in-house into praline, the vanille de Madagascar is sourced directly, and the thé matcha d'Uji, near Kyoto, was selected by Yasu Kakegawa. Our tip: try the glace matcha — you can instantly taste the difference compared with real matcha (and, as the house itself admits, it’s the ice cream that costs them the most to produce).

One quick note: these are real artisanal ice creams, not loaded with additives, and they tend to melt pretty quickly. So will they even have time to melt before you’re done with them?

Where and when to sample Pleincœur's ice creams

The Pleincœur Ice Cream Bar awaits at 64 Rue des Batignolles, in Paris’s 17th arrondissement. The shop is open daily from 8:00 a.m. to 8:00 p.m., with ice creams served from 11:00 a.m. to 7:00 p.m. And if they steal the show this summer, the rest of the house shouldn’t be overlooked: a roasted specialty coffee from Paris and its signature lattes, hazelnut or vanilla, also offered in a frozen version.
