Restaurant Terra, sharing cuisine in the Marais

Since spring, the Marais has been home to a new restaurant combining shared cuisine and market produce. The name? Terra.

If you're looking for a friendly restaurant with generous, simple cuisine based on seasonal produce, then head for Terra. Inaugurated this spring in the 3rd arrondissement of Paris, Terra gives pride of place to raw produce and shared cuisine.

Behind this contemporary atmosphere is Alexandre Marie. Passionate about the restaurant business, he left his job in optics to make his dream come true. Teaming up with his childhood friend Robin Stucki (already head of the Chez Nous wine bar), the duo created Terra, a reference to nature.

The idea? To offer a creative menu using local produce, and above all to develop the idea of sharing by suggesting dishes for 2 to 6 people.

To achieve this, the two acolytes called on Chef Jean His. Having previously worked at Saint-Pierre in Singapore and the Grande Maison Joël Robuchon in Bordeaux, Jean His has designed a short but tempting menu that changes every month.

When we discovered the restaurant a few months ago, we were treated to celeriac ravioli with oxtail in a ginger broth (14€) and salmon gravlax (14€), horseradish cream and Iranian black lemon.

As for dishes to share, there were 4 possible choices, including cod, dashi-sesame broth, baby vegetables (for 2; 59€) and farmhouse guinea fowl 'Vallée d'Auge' style, onions and mushrooms (for 2; 54€).

But it was the butternut ravioli with chanterelle pickles and sage butter (for 2; 52€) that won our gourmet hearts. Then it was on to the Iberian Peninsula with an incredibly tender Presa de Bellota (for 2; 69€), mashed sweet potatoes with smoked paprika and chimichurri sauce. To accompany these dishes, Terra offers a fine selection of natural wines.

Desserts include chocolate cookie, caramelized banana, espuma choco-noisette (9€) and pineapple-kiwi pavlova, exotic tea cream (10€). Gourmands!
