If you’re looking for a friendly restaurant serving hearty, but simple food based on seasonal ingredients, then head to Terra.
Open in Spring 2019 in Paris 3rd arrondissement, Terra gives pride of place to raw ingredients and food of sharing.
Behind this place with a contemporary atmosphere, we have Alexandre Marie. Fond of food, he quits his job in the optical field to make his dream come true. Teaming up with his long-time friend Robin Stucki (already running wine bar Chez Nous), the duo gives birth to Terra as a reference to nature.
The idea? Offering a creative menu with products from the market and most of all developing the sharing idea by serving dishes for 2 to 6 patrons.
To make it happen, the two friends called in Chef Jean His. Trained at Saint-Pierre in Singapore and Grande Maison during Joël Robuchon’s leadership in Bordeaux, Jean His created a short but tantalizing menu changing every month.
This January, patrons can treat their taste buds by enjoying, as starters, soft-boiled egg with black truffle, celeriac and poultry jus or the stuffed artichoke with pine nuts and turmeric emulsion.
Moving on to main courses, 4 choices are available including homemade tagliatelle with squid ink, Lardo di Colonnata and cockles (€54 for 2 persons) or salmon with sorrel, baby potatoes and spinach (€59 for 2 persons) or the 3-kg free range guinea fowl with mashed potatoes and seasoned jus (€94 for 3 persons).
Finally, for desserts, we have a chocolate mille-feuille and a lemon-meringue pie.
And to accompany these dishes, Terra bets on nature wines.
