If you’re looking for a friendly restaurant serving hearty, but simple food based on seasonal ingredients, then head to Terra. Open in Spring 2019 in Paris 3rd arrondissement, Terra gives pride of place to raw ingredients and food of sharing.
Behind this place with a contemporary atmosphere, we have Alexandre Marie. Fond of food, he quits his job in the optical field to make his dream come true. Teaming up with his long-time friend Robin Stucki (already running wine bar Chez Nous), the duo gives birth to Terra as a reference to nature.
The idea? Offering a creative menu with products from the market and most of all developing the sharing idea by serving dishes for 2 to 6 patrons.
To make it happen, the two friends called in Chef Jean His. Trained at Saint-Pierre in Singapore and Grande Maison during Joël Robuchon’s leadership in Bordeaux, Jean His created a short but tantalizing menu changing every month.
When we came alreay a few months ago, we enjoyed celeriac and oxtail ravioli served with ginger broth (€14) and gravlax salmon (€14), horseradish cream and black lemon from Iran.
Moving on to main courses to share, 4 options are available including cod, dashi-sesame broth, vegetables (for 2: €59) and free-range guineaw fowl 'Vallée d'Auge' style, onions and mushrooms (for 2: €54).
But our hearts have been conquered by the butternut ravioli served with pickled chanterelle mushrooms and sage butter (for 2: €52). Then, we moved on to the Iberian Peninsula with a Presa de Bellota of an incredible tenderness (for 2: €69), mashed sweet potatoes with smoked paprika and chimichurri sauce. And to accompany each dish, Terra bets on a very lovely nature wine selection.
Finally, for desserts, enjoy some chocolate cookie, caramelized bananas, chocolate-hazelnut espuma (€9) and the pineapple-kiwi, exotic tea cream pavlova (€10). So luscious!
