Selva, this is the name of this South-American restaurant in Paris. Head to the 5th arrondissement, across the Musée de Cluny to enjoy original Latino dishes filled with spices and cooked over charcoal.

On the plate, sun no matter the moment of the year. When we came back this winter, we enjoyed:
A divine ceviche called Tiradito Nikkei, this dish is based on wild blue fish, changing with the seasons, kumquat, avocado, kiwi, turnip, the whole served in ponzu Nikkei sauce. We must say Nikkei cuisine (the nickname of Japanese who emigrated to Peru) is very common in the Peruvian cuisine. At Selva, the chef makes us discover this cuisine coming from a mix of cultures.

As well as starters, we went for the Anticuchos de corazón, based on charcoal-cooked beef, potatoes, and mayo rocoto (Peruvian chili pepper) sauce.

Moving on to main courses, we went for the Pulpo a la brasa winter style, braised squid, anticuchera sauce served with parnsip mash, roasted leek, watercress, amaranth sprouts, and Kalamanta olive sauce.

But the must this season truly is the Arroz con Pato, a huge traditional Peruvian dish for two. It is based on traditional Peruvian rice, marinated duck breast, pan-seared seasonal vegetables, and salsa cribla (Argentinean sauce based on vinegar vegetables). Here is a warm dish served in a big paella-like pan, it has it all to please the biggest foodies among us.

Last but not least, let us finish with the surprising desserts. On one hand, the Mil Hojas mixing mikado corn tuiles with mozzarella mousse, chopped pears and Dulce de leche.

On the other hand, the Membrillo based on candied quince, citrus fruit segments, huacatay mousse (Peruvian aromatic plant, very herbaceous between sage and tarragon), quinoa curable, timut pepper, and citrus fruit powder.
