Chef Sukwon Yong opens his first restaurant in Paris – Perception – shining a light on French gastronomy mixed with Korean hints.

A new restaurant mixing French gastronomy and Korean flavors recently opened in Paris 9th arrondissement. Called Perception, this new restaurant is by Korean chef Sukwon Yong who trained at Ze Kitchen Galerie and by maître d’hôtel Barnabé Lahaye from Maison Rostang where he met Sukwon Yong.

The gourmet duo has teamed up to unveil their vision of cuisine: classic gastronomy rooted in French terroir and carried into a journey of many Korean flavors – the chef’s motherland. At Perception, no iconic dish from Korea but French basics adding here and there Korean techniques that make the very soul of chef Yong.

Starters set the tone. The seabream carpaccio marinated in salt is paired with fresh kefir lime, 5 citrus condiments and omija jelly – a very umami Korean berry. As for mains, chef Sukwon Yong master his French scales and allows himself to deliver a version of tofu-stuffed cabbages, spinach, shiitake and kimchi. As for dessert, the chocolate ganache tart and hazelnut feuillantine, vanilla and soy milk sorbet will delight sweet-toothed foodies!

A confidential venue we are looking forward to discovering!
