The Peninsula returns to the very essence of Christmas. For her 2025 Yule log, Anne Coruble unveils her Joyau des Pins, a gourmet creation composed of no less than 12 layers paying homage to Provençal tradition.

Looking for an exceptional Yule log to enhance your Christmas table? We reveal Joyau des Pins, the 2025 Christmas log from The Peninsula Paris, created by pastry chef Anne Coruble, and we're fans. This spectacular 13-layer log pays vibrant homage to the 13 Christmas desserts, a Provençal tradition dating back to the 17th century that we love so much. Inspired by a pine cone picked in the forest, it combines woody aromas and childhood memories for the holidays.

This original Yule log is as beautiful to look at as it is to taste. Anne Coruble, voted Pastry Chef of the Year 2024 by La Liste, drew inspiration from nature for this creation. The pine cone evokes the first steps leading up to Christmas Eve, childhood, and walks in the forest. As is often the case with Anne Coruble, we find this attention to the details of nature—foliage, winter light, bark—transformed into gourmet creations.

This gourmet log is divided into two parts. The upper part, with its relief design, features carefully placed scales. The base is a tablet that can be broken and shared among guests. We love this playful aspect, which transforms the tasting into a convivial moment around the table.

At the heart of this creation are 13 layers. This nod to the 13 Christmas desserts, a Provençal tradition dating back to the 17th century, symbolizes sharing. For those who are unfamiliar with it, these 13 desserts represent Christ and his 12 apostles at the Last Supper.

Anne Coruble has chosen the scents of the forest for this Yule log from The Peninsula Paris. Wood, rice, pine, and honey blend together in a sweet, woody, and resinous flavor palette. Each element evokes winter landscapes, from the forest floor to the scents of resinous trees. It's like taking a walk in the forest, with that feeling of coming back inside to the warmth after a winter stroll.

The detailed composition reveals the pastry chef's expertise. It features a 60% Peruvian milk chocolate shell, a cedar wood-toasted rice mousse, a pine nut praline, a dulce de leche with pine honeydew, rice pudding, a pine nut spread, a Japanese biscuit, a sticky rice cream, a shortbread reconstituted with barbecue-grilled pine nuts, a 65% dark chocolate shell from Peru, a semi-salted vanilla caramel, a pine nut praline, and a crispy puffed rice with pine nut shortbread. A beautiful combination that takes your taste buds on a journey.

What we love about Anne Coruble is that she reinvents herself every year. Her creations generally combine between 9 and 15 different preparations. Each dessert tells a story and evokes an emotion.
