For Easter 2025 , Evok Group's new pastry chef Fabien Emery is offering a superb collection ofchocolate eggs inspired by the sculpted ornamentation of Notre-Dame de Paris. These limited-edition creations pay tribute to the cathedral's reopening, and will be available to order at the fine addresses of Brach Paris, Nolinski Paris and Cour des Vosges.
As a reminder, Fabien Emery, a renowned pastry chef, has succeeded Yann Brys as head of sweet creations for the Evok Collection group. European Sweet Art Champion in 2017, he cut his teeth at Lenôtre and Pierre Hermé before bringing his expertise to Evok in 2021. This is his first Easter collection, combining refinement and architecture.
At Brach Paris, the Trésor egg plays on textures and reliefs, echoing the engraved stones of Notre-Dame. Its smooth, rough shell hides an interior adorned with sculpted motifs, sublimating the cathedral's Gothic influence. Made from Tanea 43% milk chocolate, it contains an almond praline punctuated with caramelized almonds, offering a gourmet alliance of crunch and fondant. Available at €80 for 800g (18 cm).
At Nolinski Paris, the Grace egg reflects the elegance of the cathedral's Gothic arches, with a sculpted structure enhanced by golden accents. Its deep, intense 64% Gaya dark chocolate envelops a pumpkin seed praline with a hint of lime, creating a subtle balance between richness and freshness. Available at €80 for 800g (18 cm).
The Evok group's Rose egg, , pays homage to Notre-Dame's famous rose windows. A veritable sculpture in 64% Gaya dark chocolate, it reveals an exquisitely fine hazelnut praline, evoking the light and colors of the stained glass windows adorning the cathedral. Available at €80 for 800g (18 cm).
