The real Guinness draft system lands in France at Molly's.

Molly's, ideally located in Paris 12th arrondissement, between the Bastille and Gare de Lyon districts, has taken on a bold, almost daring bet: to become the first venue in France to install a system dedicated to the perfect Guinness. The goal? To deliver the same tasting quality as in Ireland, all in a warm, convivial atmosphere that feels like an authentic Irish pub.

A Guinness the Dublin way... in Paris!

The story starts with Kevin, often traveling between Dublin and Paris, and who is regularly faced with the ritual question:  "Why is Guinness better in Ireland?"

If you’ve ever wondered about it, you’re not alone. That familiar realization has sparked not only his curiosity but his determination. How do you explain the striking gap between a Guinness poured in Dublin and the one served in Paris? Kevin decided to dig deeper: “So I began looking into the question and exploring the possibility of creating a system as efficient as the ones I’d observed in many Irish pubs.”

This is a project that doesn't happen on a whim: for Kevin, it involved a substantial investment of time and money, with no guarantee of success. I visited several Dublin pubs serving excellent Guinness. I was able to understand how their tap systems work and how to adapt them to Paris.

Where passion, craft and a sharp eye for detail meet

Initially slated for Saint Patrick's Day 2025, the project has taken longer than anticipated. “I hoped everything would be ready for Saint Patrick's Day 2025, but we needed a lot more time to perfect it.”

But the wait was worth it: "After months of testing, renovations, adjustments and staff training, we’re pleased to announce that it’s finally in place. We’re proud to be the first pub in France to install a system dedicated to pouring the perfect Guinness. We hope you’ll enjoy it – so don’t hesitate to swing by and sample a pint!
