On November 11, 2025, themedieval city of ProvinsinSeine-et-Marne will pay tribute to its pastry specialty: niflettes! But what exactly is a niflette? Niflettes are small pastries, sold by the dozen, which hide a pastry cream flavored with orange blossom under their puff pastry. Their origin dates back to the Middle Ages, when they were distributed to orphans at the exit of cemeteries on All Saints' Day.
That's where they get their name from, since the Latin injunction "Ne flete!" means "Don't cry! Since those ancient times, Provins' many pastry chefs have been offering these gourmet cakes to their customers every All Saints' Day. Once again this year, the town has thought big and is paying tribute to this famous and delicious pastry with a new edition of its Fête de la Niflette!
In the heart of Provins, a medieval town listed as a UNESCO World Heritage Site, the Fête de la Niflette attracts locals and tourists alike every year. The gourmet market organized in the cobbled streets of the old town allows visitors to discover a variety of artisanal and regional products, with more than 120 exhibitors and stands dedicated to cheeses, charcuterie, and other regional specialties.
The program for this completely free day includes tastings of this medieval pastry, pastry workshops and continuous demonstrations by Provins bakers, activities for the whole family where children can make their own niflette, and a jazz atmosphere with music groups on Place St Ayoul and in the city's restaurants.
Like any self-respecting medieval town, Provins offers children two exceptional activities: the Accrotour, for climbing an 11-meter tower,the Accrovoile, for climbing a mast to attack enemies, and the Belle Roue, a wooden carousel.
