From March 19 to the end of June 2026, Christophe Michalak is launching a gourmet pop-up at Printemps Haussmann. An ephemeral space that spotlights one of the pastry chef's signature creations: his famed ourson guimauve reimagined.
Named "Once Upon a Teddy Bear", this culinary event revisits the story behind a beloved pastry inspired by a popular candy from the 1960s. In the early 2000s, while serving as head pastry chef at the Plaza Athénée, Christophe Michalak took this sweet treat and crafted a creative reinterpretation of it.
With this reinterpretation, the teddy bear moves away from the world of traditional confections to step into the realm of contemporary pastry. Over the years, the recipe has evolved within Maison Michalak. The chef's team has experimented with textures, coatings, and flavor pairings to craft various creative takes on this classic treat.
For this Parisian pop-up, a curated selection of 12 marshmallow bear recipes is being offered for children and adults alike. Two sizes are available: a mini version priced at €2.50 and a larger, more indulgent option at €5.70. It’s also a great chance to explore the collection of 3 shortbread bear recipes: hazelnut milk chocolate, hazelnut dark chocolate, and hazelnut dulcey chocolate.
So, which little teddy are you falling for? It’s worth noting that over the years, several other pastry chefs in the capital have also put their spin on the classic marshmallow teddy bear. Among them, you’ll find Cyril Lignac, Maxime Frédéric, and Alain Ducasse!
