The Parisian summer promises to be both rich and deliciously frosty! Ice cream lovers are in for a treat, because it’s the perfect moment to refresh your palate with creations from the capital’s best ice cream makers. Are you after a tasty and original way to cool off?
Heading to Place de la Concorde, at the foot of the legendary Hôtel de Crillon, to discover the frosted concept that should catch the eye of pastry lovers! From June 3 to August 15, 2026, the Cabane du palace parisien makes its grand return.. Who's in charge of this frosted-chic interlude? Matthieu Carlin, the hotel's pastry chef, who is committed to offering creations that are not overly sweet, highlighting natural flavors while slipping in, here and there, a retro, comforting touch.
After several editions focusing on the iced cookie, the chef here reimagines his signature creations in a frosty version. On the menu, peaches to please the sweet-tooths — lemon meringue tart, Paris-Brest, and raspberry pavlova — arrive at this gourmet outpost alongside one of the iconic iced-cookie recipes, the chocolate-cookie, the only previous-year creation kept on the menu. They can be paired with a selection of lightly sweetened iced teas.




While pastries are typically substantial or a bit tricky to eat on the go, the chef has clearly anticipated this. The ice creams are thoughtfully designed for hot days, featuring a texture variation that echoes the pastries that inspired them, while also staying practical for grab-and-go enjoyment, since they’re served in handy tubs.
We also relish the chance to witness the final touches on these treats made to order: chantilly for the pavlova, blowtorch caramelization and grated lemon zest for the lemon tart, and the praline filling for the Paris-Brest. One cannot help but admire the poised, almost balletic motions of pastry craft that precede the tasting.
The four creations were crafted to appeal to every type of sweet-toothed palate: we particularly recommend the iced cookie for kids and chocoholics, while the lemon tart, the chef’s favorite, will stand out as the lightest option. The Paris-Brest, richly indulgent and crowned with choux pastry, should especially delight fans of nostalgic flavors who have kept their inner child, while the Pavlova sits at the perfect middle ground between freshness and indulgence.
Note: you can’t sit down to eat on site—the pastries are for takeaway from the kiosk in front of the hotel, perfect for enjoying as you stroll through the Place de la Concorde, along the paths of the Jardin des Tuileries... or just before a visit to the nearby Hôtel de la Marine.
