Brasserie Riviera, wood-fired restaurant

Don't call it the Riviera, call it the Brasserie RIviera! That's right, Brasserie Riviera is getting a makeover, and now offers fans wood-fired and braised cuisine, with a focus on well-sourced seasonal produce.

2021, the year of change on the Riviera. In January 2021, the restaurant will unveil its new face, under the impetus of partners David Grospiron and Lionel Nabet. From now on, don't call it the Riviera, call it Brasserie Riviera. And the change takes place in the kitchen, where chef Julien Gasperi is at the helm of the spot, serving up braise-style cuisine made exclusively from seasonal produce.

When David Grospiron and Lionel Nabet met Julien Gasperi and asked him what his ideal restaurant was, he replied without hesitation "a restaurant based around wood-fired cooking". Give me five! The idea appealed to the duo, and the menu was completely redesigned around this new concept. As soon as you enter the restaurant, you'll be able to see the imposing barbecue in the kitchen.

A graduate of theFerrandi school and having worked in the kitchens of Antonin Bonnet's Michelin-starred restaurant Le Sergent Recruteur, chef Julien Gasperi has created a menu for Brasserie Riviera based on fresh, seasonal produce, always well sourced from loyal producers with whom he has worked for many years.

Let's take a look at some of the dishes you'll soon be able to try - probably to take away, at first - ? In winter, the focus is on meats roasted over glowing embers or vegetables burnt over embers, from pig ribs from Ferme Montlagast in Aveyron to 100-day-old milk-finished red label chicken wings, as well as whole scallops with Jerusalem artichokes and elderberries, Cévennes onion soup with smoked milk and caramelized onions, and real homemade lasagne with blond Aquitaine beef, baked in a charcoal oven.

In summer, other delicacies such as grilled vegetables, poultry and red meats take pride of place. But seafood lovers won't be outdone, either, with ceviche of line-caught sea bream, barbecued sardines or whole grilled fish.
