Hakuba Paris, the new Japanese restaurant at Cheval Blanc has opened its doors

Cheval Blanc Paris opens its Japanese restaurant. Hakuba has taken the place of the long-established Limbar. On the first floor of the palace, you can now discover the creations of sushi master Takuya Watanabe, in association with chefs Arnaud Donckele and Maxime Frédéric.

Cheval Blanc Paris already boasts several restaurants: Plénitude, the three-starred restaurant, Tout Paris, the brasserie with a breathtaking view, Langosteria for lovers of Italian cuisine and, very soon, Hakuba Paris, a Japanese restaurant.

On the first floor of the grand hotel, where the Limbar used to be, a former tea room that also served as a bar in the evenings, you'll be able to discover in March a restaurant that pays tribute to Japanese cuisine.

At the helm of this project, in partnership with 3-star chef Arnaud Donckele and pastry chef Maxime Frédéric, is Japanese sushi master Takuya Watanabe.

Takuya (Taku) Watanabe, founder and head chef of Jin Paris, the first sushi omakase in Paris to be awarded a Michelin star, began his career at the age of 19 in Sapporo. After honing his skills in sushi and Japanese cuisine, he was awarded his first Michelin star just one year after opening Jin Paris, which he maintained for 10 consecutive years. Taku also opened Taku Mayfair in London in 2022, an edomae omakase in the heart of Mayfair, recently awarded a Michelin star. He followed this up in March with Kaïto in the 6th arrondissement.

Within Cheval Blanc Paris, Hakuba' s ambition is to become a sanctuary dedicated to the art of Japanese cuisine. Imagine the marriage between the Japanese art of Takuya Watanabe and the talent of Chef Arnaud Donckele, master of sauces. The program includes Omakase menus where you can immerse yourself in the finesse of Japanese cuisine. The two chefs, supported by their teams, explore flavors through a variety of dishes, from broths to sushi, delicately prepared fish and refined sobas.

Pastry chefMaxime Frédéric enriches the experience with sweet creations inspired by Japanese culture, blending French pastry expertise with Japanese traditions. The restaurant, named after the Japanese term for "white horse", is designed to offer privileged interaction between chefs and guests, thanks to three intimate counters, including a private area.

Hakuba'sdecor, inspired by Japanese tradition, combines noble materials and craftsmanship, offering immersion in a setting that is both contemporary and imbued with naturalness. The tableware, carefully selected from artisans in Kyoto and Fukuoka, promises to immerse us in authenticity.

Hakuba celebrates conviviality and sharing, offering Omakase menus for lunch and dinner, with prices ranging from €180 to €420. Hakuba is an open window on the refinement of Japanese gastronomy, inviting gourmets on a unique culinary journey in the heart of Paris.
