Mantra, the French-Malaysian fusion restaurant in Mers-les-Bains, Paris

The duo behind the L'Itinérance restaurant in Mers-les-Bains (80) open a Franco-Malaysian restaurant in Paris: Mantra. See you in October!

While the L'Itinérance restaurant in Mers-les-Bains, in the Hauts-de-France region, promotes French-Malaysian cuisine, it's in Paris that the two men at the helm of the restaurant will be opening a new address next autumn. Named Mantra, this new restaurant will open in October in the 9th arrondissement of the capital.

Behind the original address are Jonathan Caron, the restaurateur behind the late starred restaurant L'Innocence, and Manogeran Shasitharan aka Jack, the head chef. Together, they decided to bring this Franco-Malaysian fusion cuisine to Paris... Great news for Parisian gourmets.

This is not the first time the two have worked together. After starting out in the restaurant business with Bernard Pacaud and then Christophe Pelé, Jonathan Caron made a name for himself on the Parisian scene as owner of L'Innocence restaurant, which was awarded a Michelin star in 2020. For his part, Manogeran Shasitharan started out in the kitchen with chef David Le Corre at Paris-Nice, before continuing his career in top restaurants (L'Espérance with Marc Meneau, Côte Saint- Jacques with Jean-Michel Lorain, Saint-James in Paris and Petit Hôtel Confidentiel).

It's at 17 rue Rodier that the two partners will be setting down their suitcases of knives and aprons in October. It's an address that's no stranger to the Parisian culinary microcosm, since it's the address of the now-defunct Bourrache wine bar.

Together, they will imagine a cuisine that bridges the gap between the Picardy coast and Malaysia, with the ambition of pushing the Malaysian markers even further and positioning themselves in a more gastronomic niche than at the Mers-les-Bains restaurant, in a fifteen-seat restaurant with an intimate atmosphere and raw decor.

It's sure to be an address to watch out for next fall.
