Pierre Gagnaire keeps on spinning his thread in Paris. After his eponymous restaurant, then Gaya come and discover his third baby: Piero TT.
I’m sure this name may ring a bell…. And for good reason since the multi-star Chef already owns a restaurant with the same name in France.
Based in Hôtel Les Airelles, Courchevel, Piero TT makes many Savoyards and tourists happy thanks to a colorful, flavorful and happy cuisine inspired by Italy. In addition to the unmissable antipasti, pasta and risotto, it’s the entire Italian culinary heritage we enjoy at Piero TT.
Since mid February 2019, Pierre Gagnaire has opened in Paris a Parisian version of Piero TT.
As for the location, Piero TT has settled in Paris 7th arrondissement, more exactly at 44 rue du Bac, in lieu of former Gaya. For the decorum, the restaurant reveals - on two stories - dark panellings as well as almond green walls for a convivial atmosphere between trattoria and bistro.
Offering a “more relaxed gastronomy yet demanding, accessible, simple and comforting”, Piero TT bets on quality ingredients including spaghettoni Benedetto cavalieri, pizzaiola tomatoes, Milanese vitello, artichokes… The whole is cooked by chef Ivan Ferrara with a readable and short menu designed by Pierre Gagnaire around dishes embodying the great Transalpine classics.
On the menu? Antipasti giving pride of place to Italian charcuteries and cheese, as well as squid cooked with pesto ligure and celery, or a beef carpaccio with Melanosporum black truffle, paremsan and rutabaga.
For main courses, you can choose between seven dishes of pasta and risotto: fresh spaghetti and seafood or flavored with Melanosporum black truffle, bucatini and pecorino romano and pepper, or cappelletti cooked in truffled poultry broth. We also have two fishes including seabass with endive and Cremone mustard cream, and two meats including the unmissable Milanese vitello with camus artichokes and watercress.

As for us, we went for pasta and the mouthwatering scent already tickles our taste buds. On one side, we have the delicious and hearty ravioli hiding a flavorful stuffing made of ricotta and arugula, served with sweet sage butter.
On the other side, we have the incredible gnocchi that are breathtakingly smooth and delicately put on a spinach cream and served with crispy Parma ham bites. We both loved this very beautiful and delicious plate!

After such a tasting, we can only go for one of the eight desserts available on the menu. To satisfy our sweet-tooth, Pierre Gagnaire called in Julie Bellier who provides for Piero TT a rum baba, a torta capri and even Chocolat Piero TT...
And since it's an Italian restaurant, we fall and literraly melt for the homemade tiramisu that is both creamy and generous. A pure moment of gustative pleasure.
Honorable mention as well for the original Burrata Campari and its creamy chestnuts, where bitterness and good food are perfectly paired!

In other words, you may have understood it, but Pierre Gagnaire's new parisian address is a sure bet to discover asap. A piece of advice: don't forget to book several days in advance to taste Piero TT dishes in Paris.
