It's not a new address we're proposing you discover today, but rather a lovely table that, over the years and over the past decade, has known how to challenge itself in the best of ways. Open since 2013 on the corner of Rue d'Uzès and Rue Montmartre, Circonstances has been offering a new dining experience since the start of the new school year, with small plates to share and discover a multitude of flavors .
And there's plenty of flavor in theCirconstances plates ! In the kitchen, chef Franck Dervin, who worked at Guy Savoy, and in the dining room, his wife, Karin Rouet; a power duo with a character as assertive and pleasant as their very, very naughty dishes. As you'll have gathered, sharing and conviviality go hand in hand here.
On the à la carte menu, you'll find a multitude ofsharing plates, with a strong emphasis on choice meats and cochonnaille: crispy pig's trotter galette with celery remoulade (11€), semi-salted shank with salsa verde and fregola sarda like a risotto (9€), grilled blood sausage with spinach shoots in vinaigrette (9€), everything is definitely good about cochon.
These small plates, of which the owner recommends 3 to 4 per person, are served alongside even more generously prepared dishes, such as beef compote and roasted wild shrimp (€20), or roast mallard duck in crapaudine (€29).
For our part, we fell for the delicious roasted quail fillets (served raised, please!; 19€), accompanied by small chanterelles, a seasonal must. And to ease our conscience, we invited a little greenery to our table, with excellent fried artichokes dipped in a spicy mayonnaise (7€) and sweet potato croquettes with ginger and homemade tahini (10€).
Two cocktails later, the Palawan (cachaça, kalamansi juice; €9) and the Republica gin and tonic (gin, lime, wild Madagascar pepper, tonic; €9), we're ready to discover the more traditional desserts. Chocolate mousse, lemon tart? In the end, it's crème caramel with lime zest (8€) and baba au rhum with its airy whipped cream (9€), which we happily drown in rum from a bottle brought to our table to pour as we please.
As part of a reasoned, seasonal approach, with the desire to highlight the best of local producers, Circonstances has proved its ability to jump on the bandwagon by offering a cuisine that appeals to more and more Parisian gourmets: dishes for sharing that allow for all kinds of folly.
Please note that it's been over 4 years since our last visit, so the place and experience may have changed.
This test was conducted as part of a professional invitation. If your experience differs from ours, please let us know.
