Ramens are delicious Japanese noodle soups we love and that keep delighting us as we look for boiling Asian dishes. head to the Passage des Panoramas in Paris 2nd arrondissement (the first covered passage in Paris that has kept its old charm and busy spirit) to discover Ramen Bar.
Set at 53 Passage des Panoramas, the Ramen Bar is – as its name suggests – a counter where one can enjoy ramen made and served in front of you by a lovely 4-hand duet. The spot was opened in 2020, just before the 1st lockdown, by Guillaume Guedj – to whom we already owe Mister T and the restaurant of the hotel Bachaumont.
As for the kitchen, it features Charlotte Peyen, former chef at Ippudo and Kodawari, and Gillian as the executive, together working fast in front of us. On the menu, recipes by chef Tsuyoshi Miyazaki serving great combos, both traditional and innovative.
As soon as you get in, you enter a welcoming and warm atmosphere, like a Japanese bar. Woodworks, white tiled counter, neon and soft lights put the décor together. The menu is simple, short and without fuss.
As for us, we started with the beef tataki served with wasabi cream and marinated ginger, and the Nita Mayo with truffle accompanied with shiitake mushrooms and orange zests. It is delicate and well-seasoned, we approve.
Then, we moved to ramens of course. We got two options: the classic ramen with Buta Yaro pork and 3 different fermented soy paste, and soy milk, with fresh egg wheat noodles, 3 slices of 10-hour stewed pork, pak choi cabbage, spring onions, corn, paprika and soy sprouts.
And the Supa Black Tan, based on spicy black sesame and chicken broth, served with fresh egg wheat noodles, minced beef stew, pak choi cabbage, soy sprouts, leeks and spring onions.
Bowls are hearty, noodles very fresh, and broths very low in salt, but exquisite. In others words, it was very indulging. And to finish, the dessert of the day. That day, some black sesame cheesecake.
In other words, how about getting some tasty Ramen by the Grands Boulevards?
