A good Ramen in Paris? Head for the historic Passage des Panoramas, between the Grands Boulevards and the Sentier district, to discover Ramen Bar, a boui-boui with a no-frills feel.

Ramens, those famous Japanese noodle soups we love so much, continue to seduce Parisians, tourists and Parisians in search of good hot Asian dishes. Head for the Passage des Panoramas in the 2nd arrondissement (the first covered passageway in Paris to retain its charm and effervescence of yesteryear) to discover the Ramen Bar.

Located at 53 Passage des Panoramas, the Ramen Bar is, as its name suggests, a counter where you can enjoy ramen made and served in front of you by a lovely 4-handed duo. This spot was opened in 2020 just before the reconfiguration by Guillaume Guedj, who is already responsible for Mister T and the restaurant at L'hôtel Bachaumont .

In the kitchen, Charlotte Peyen, former chef at Ippudo and Kodawari, and Gillian, executive chef, work at full speed before our very eyes. On the menu are the recipes of chef Tsuyoshi Miyazaki, who offers some wonderful combinations, both traditional and innovative.

From the moment you enter, you'll find yourself in the warm, welcoming atmosphere of a Japanese bar. Wood panelling, a white tiled counter, neon lights and subdued lighting set the scene. The menu is simple, short and unadorned.

We start with beef tataki with wasabi cream and pickled ginger, and truffle nita mayo with shitake mushrooms and orange zest. Fine and well-seasoned, we approve.

We then move on to the ramen, of course. We choose two options: the classic Buta Yaro pork ramen with 3 different fermented soybean noodles and soy milk with fresh egg wheat noodles, 3 slices of pork simmered for 10h, pak choï cabbage, cebette, paprika corn and bean sprouts.

And the Supa Black Tan, a spicy black sesame chicken broth with fresh egg wheat noodles, simmered ground beef, bok choy, bean sprouts, leeks and cebette.

The bowls are generous, the noodles fresh and the broths a little salty but excellent. In short, a real treat. We finish with the dessert of the day, a black sesame cheesecake.
