At the helm of this new spot is Benjamin Morel, formerly head of Le Petit Bouillon Pharamond and currently of Le Bon Bock in Paris. His philosophy? To remain faithful to the typical Bouillon dishes that made this concept, born during the Belle Époque, so successful. The menu offers a fine selection of the classics we love so much.

Starters include the essential deviled eggs, enhanced here with truffles for connoisseurs (€4.50), the famous Burgundy snails to share or enjoy on your own (€8.90), and the unmissable bone marrow served with croutons and fleur de sel (€6.90). The onion soup au gratin (€6.90), leeks with apple vinaigrette and fried onions (€5.50), and trout gravlax with dill cream (€6.50) are among the choices to discover. Also worth noting are the duck terrine with foie gras and piquillo peppers (€8.90), the herring fillet with baby potatoes in oil (€6.50), and the roasted camembert with honey (€6.90).

On the menu, the beef bourguignon (€13.90) features tender pieces of beef with al dente coquillettes and a sauce that smells of wine without being overpowering. The haddock brandade (€11.90) is not fishy and is accompanied by a curly endive salad.

We particularly love the generous sausage (€10.90), which comes from an artisan producer in Le Mans and is accompanied by creamy homemade mashed potatoes and a tasty meat jus. If you like fries, the ones served here are very good (€3.90 as a side dish). The cheese coquillettes with summer truffle cream and spring onions (€8.90) will delight lovers of comfort food, as will the duck confit parmentier with curly endive salad (€13.90). The butcher's cut with shallot sauce and fries, which is still affordable (€13.90), the whole sea bream roasted with beurre blanc and poached spinach (€14.50), and the pumpkin stuffed with lentils and mushrooms (€9.90) for vegetarians complete this fine selection. The Normandy-style chicken fillet with homemade mashed potatoes (€10.90) is also a sure bet.

For dessert, we were tempted by the delicious caramelized tarte Tatin served with thick cream (€6.50). The French toast, known here as brioche perdue with homemade salted butter caramel (€4.50), is good, although a little thin for our taste. The profiteroles with vanilla ice cream and hot chocolate sauce (€7.50) are a real treat. There is also the classic chocolate mousse (€5.90), crème brûlée (€4.90),île flottante(€3.90) and trou normand (€5.50). Ice cream (vanilla, chocolate, strawberry) is available at €1.90 per scoop.
