Michelin Guide 2025: New starred restaurants in Paris and the Ile-de-France region

Expected like the Messiah, the 2025 edition of the Michelin Guide was unveiled this Monday, March 31, 2025. Discover the restaurants awarded one, two and even three stars, and in particular the 9 new starred restaurants in Paris and the Ile-de-France region!

A true tradition in the world of French gastronomy, the Michelin Guide unveiled its 2025 awards list on Monday March 31, at a ceremony held for the fourth time outside Paris, in Metz.

This year, the Michelin Guide 2025 awarded 78 new stars, all macaron included, almost half of them to newly opened establishments - 57 first stars. Last year, 62 restaurants were promoted, 52 of which were awarded a first star. All in all, a particularly successful 2025 edition!

The Michelin 2025 Young Chef Award was presented by Gilles Goujon to Valentina Giacobbe of restaurant Ginko (Lille). The Prix du Service 2025 was awarded to Valentin Cavalade of Jules Verne in Paris and Coralie Semery of Ebullition (Montpellier). The Michelin Sommelier Award 2025 went to Jean Dumontet of Frédéric Doucet (Charolles) and Maéva Rougeoreille of Jean Sulpice (Talloires-Montmin).

For the fourth year running, the Michelin Guide is also unveiling its "Chef Mentor" award, presented to a chef who is committed to training. Last year, the award went to Yannick Alléno. This year, the trophy goes to Bernard Pacaud, chef of the 3* L'Ambroisie restaurant in Paris's 4th arrondissement.
For the sixth year running, the Michelin Guide also revealed its 10 new green stars, including one in Paris, rewarding restaurants with a sustainable approach; as well as 10 restaurant and palace pastry chefs, including two Parisian chefs, joining the Passion Dessert 2025 promotion.

The Michelin Guide 2025 has chosen to award 9 two-star restaurants, including 2 in Paris: Restaurant Blanc in the 16th arrondissement and Sushi Yoshinaga in the 2nd arrondissement.

The restaurants in the rest of France awarded a second star are : Maison Nouvelle (Bordeaux), Rozo (Marcq-en-Baroeul), Baumanière 1850 (Courchevel), L'Abysse Montecarlo (Monaco), L'Observatoire du Gabriel (Bordeaux) and Auberge de Saint-Rémy (Saint-Rémy).

Finally, for the ultimate distinction, the Michelin Guide 2025 awarded 3 stars to 2 restaurants, Christopher Coutanceau in La Rochelle and Hugo Roellinger's Le Coquillage (Saint-Méloir-des-Ondes), bringing the total number of 3* establishments in France in the famous red guide to 31.
