Respect for the land, the seasons and animals, but also a commitment to better nutrition... The Michelin Guide rewards responsible restaurants that make sustainable commitments based on ethical and environmental innovations. Discover the new "Green Stars" restaurants in the Michelin Guide 2025!

For the past five years, the Michelin Guide has been rewarding restaurants committed to a sustainable approach to gastronomy, with the Etoile Verte Michelin award. Local produce, planted terrace, permaculture vegetable garden, composting of organic waste, products bought without packaging, absolute seasonality for vegetables, picking in nature and the woods, micro-filtered water...

These are all commitments made by restaurants that resonate with the times (and a necessary ecological awareness!), and which are now promoted by the famous red guide. Last year, 9 restaurants received the Etoile Verte award, including one in Paris: Bellefeuille.

Other Parisian chefs to have earned this distinction over the years include Thibaut Spiwack(Anona), Bertrand Grébaut(Septime), Bruno Verjus (Table) and Simone Zanoni(Le George). It should be noted that this award does not replace the stars traditionally awarded by the Michelin Guide, but can be added to them!

On Monday March 31, the Michelin Guide unveiled its 2025 ranking. An opportunity to discover the new starred restaurants in Paris, as well as the new "Etoiles Vertes". This year, the red guide has rewarded 10 restaurants, bringing the total to over 100 Etoiles Vertes, including one in Paris: the FIEF restaurant.

The other award winners are: Palégrié Chez l'Henri (Autrans-Méaudre en Vercors), Osma (Sargé-sur-Braye), Hiély-Lucullus (Avignon), Les Roseaux Pensants (Cormery), Auberge des Ruines (Jumièges), Restaurant de la Loire (Pouilly-sous-Charlieu), Méson Chalut (Saint-Malo), Likoké (Les Vans) and Huna Le Restaurant (Waldersbach).

So many responsible, ecological and ethical addresses to discover without delay!
