After a stint at Cheval Blanc with Maxime Frédéric, Anthony transitioned in 2022 to focus on honing the delicate craft of lamination — the meticulous process of layering dough to achieve the signature crunch of a perfect pastry. At Baiman's, he also runs workshops called "From Butter to Heart," where enthusiasts can learn to craft croissants and galettes the traditional way.
