A new tapas bar is waking up the Marais. We headed to settle in at Carlito's, in the 3rd arrondissement of Paris.
Inside, the room runs the length of the space. You can settle along the wall, facing the bar, or toward the back tables for a quieter vibe. A laid-back atmosphere, with music and camaraderie at the heart of the place, which has been open since May 9, 2026 on Rue des Gravilliers.
Hidden at this address is Terra Group, marking its fifth Parisian restaurant after Chez Nous, Terra, Terra Bar à Vins and Terra Pizza. For this new chapter, the group teams up with Charles Crastre, aka "Carlito", the former director of Terra Bar à Vins, faithful to a convivial, demanding, and sharing-friendly dining approach.
Inspired by the buzzy spirit of Spanish tapas bars, the venue leans toward a clean, minimalist design, quality materials, and an open kitchen. The chefs cook over wood fire right before our eyes: meats, fish, seafood, and seasonal vegetables hit the grill before making their way to the table, in step with the pace of the prep.
We were drawn to the tapas with bold, unmistakable flavors. Our standout is the octopus, slow-cooked sous-vide for more than two hours and finished on the grill to order, tender and smoky just right. With its perfectly balanced bird’s-eye chili sauce, we’re sold.
The chimichurri mussels are full of flavor, the prawns flambéed with Pastis stay wonderfully juicy, and the pork shoulder skewers with chorizo, rich in flavor, won us over. The more daring will try the Spicy Aubergine: very good but very hot, unlike the Padron peppers which are ultra mild.
On the sweet side, the chocolate mousse, fairly firm, is delicious, and the grilled pineapple skewers reveal a pleasant note of star anise that won us over.

The cocktail menu, crafted by a top-notch mixologist, leans into original creations designed to accompany wood-fired cooking. Highlights include the Carlito (tequila, mezcal, chili, mango, agave, suze), the Gimme Gimlet with lime cordial and combava, and the Souvenir Futur featuring roasted beet and walnut liqueur, not to mention two smart mocktails like the Carrot Cake Tonic.
A fine selection of wines, mostly French and largely natural, completes the offer, with magnums available by the glass. Perfect for extending the evening in a festive, convivial atmosphere.
Carlito's speaks to circles of friends and fans of evening aperitifs who are looking for a lively spot in the Marais, between assiettes à partager bien exécutées and cocktails de caractère. It’s also recommended to curious diners about cuisine au feu de bois with that grilled note that pleases so much. If you’re after a quiet place, this isn’t the one.
