Straight out of the imagination of Agathe and Damien, the founders of Café Pinson, this eco-bouro concept has a lot to offer. Born from a desire to prove that one could eat organic, good, beautiful and healthy food, Café Pinson invites you to discover its creative and hearty cuisine.

The place, designed by the talented Dorothée Meilichzon who had already worked on the Beef Club and the Hotel Paradis, offers a cosmopolitan spirit, a happy mix of nods to coffee shops in San Francisco or Berlin, cosy Scandinavian notes and a very Parisian touch. Café Pinson offers an open kitchen, a central counter where the dishes are presented, comfortable benches and a relaxed service.

Solid wood counter, armchairs and daybeds covered with handmade cotton fabric, raw wood or black and white design table, exposed stone, moldings, natural materials, depolluting plants and ostrich eggs for Feng Shui form the cosy and warm atmosphere of the place.

On the menu, the menu changes every day and is obviously very plant-based. Seasonal vegetables, ancient vegetables, legumes, local fruits and even local organic kale (an ancestral cabbage with concentrated nutrients) are part of what awaits you.

The menu is French in spirit with an unexpected twist: leek and licorice pie, cooked and raw button mushroom pie, savory madeleines, parsnip 'fries' in the oven or "petit salé aux lentilles" revisited with smoked tofu.

On the sweet side, which is a big part of the café, only agave syrup and unrefined sugar are used. You will find light flavors like the milky tofu and orange blossom sweets and gourmet ones like the lemon meringue pie and the chocolate mousse without butter.

Pinson wants to be non-conformist in the plate, but also in the service. Agathe and Damien offer a cuisine that reflects their greed, where you can pick and choose from everything. Here, there is no starter-main course-dessert menu. You compose your plate as you wish. No complexes. Everyone can then add Guérande salt, gomasio (a mix of salt and crushed sesame) or brewer's yeast (with a distinctive taste, ideal for risottos).

Finally, Café Pinson is also a juice bar that will give you a boost with all its vitamins. Innovative recipes, fresh and in the respect of the raw products. Try for example the "grand air" composed of apple, carrot, spinach and essential oil of fir.
