Nearly a year after opening his modern brasserie Les Mérovingiens in Noisy-le-Grand, chef Jacky Ribault continues his expansion in Seine-Saint-Denis, a region somewhat neglected by fine dining and quality food outlets, with the inauguration of Suzanne et Lucien, his new bakery-butchery.
Just a stone's throw from his first address in Noisé, the chef - starred in his first restaurant Qui Plume La Lune in Paris, as well as his second restaurant L'Ours in Vincennes - has chosen to open this food business, named in homage to his parents, which highlights his own convictions: sustainable agriculture, animal welfare, respect for the terroir and, above all, the opportunity to stock up on good, carefully sourced produce all in one place.
On the bakery side, you'll find long-fermented natural sourdough breads made from organic flours sourced from ancient wheats - rye pie, farmhouse bread, spelt bread - as well as pastries made with milk, cream and organic raw butter from Ferme Saint Colombe in Seine-et-Marne - pain au chocolat, brioche, babka, pompe à l'huile.
On the butcher's side, the chef unveils mature meats, including Capelin pork from the Monts du Cantal and Margeride, Allaiton lamb from Aveyron, Noir de Bigorre and Landaise poultry from Arnaud Tauzin, as well as a grocery section featuring hand-picked artisanal products, such as Maison Martin hot sauces, condiments by Oscar and Maison Marc pickles.
It's a great way to fill up on goodies, and even take home a bottle of wine. A shop that's sure to delight the town of Noisy-le-Grand!
