You read that right: moch i-cookies . It’s the deliciously bold concept that Agatto Paris, the home of artisanal daifuku on Rue Saint-Maur in the 11th arrondissement, has in store for this April 2026. After trimming its activity to pastry classes only, Agathe is reopening the workshop doors exceptionally for an ephemeral tea salon from April 17 to 19, 2:00 PM to 6:30 PM, in partnership with Marine Zerbib, a consulting pastry chef specializing in the art of the cookie.
The idea is as simple as it is irresistible: Marine Zerbib has whipped up cookies specially designed around the Agatto universe, playing with the codes of Japanese pastry. And to make the experience even richer, Marie Salce takes over the room with her plastic artworks, available to buy on site. One venue, three creative worlds.
The menu is enticing. On the drinks side you’ll find the bubble tea (6,50 €) offered in the classic brown-sugar milk or sakura tea, a traditional matcha usucha served in a Japanese bowl (6,50 €), a matcha latte (6,50 €) or the more floral matcha sakura version (7,50 €), plus genmaicha, the Japanese green tea from Yakushima island with puffed rice, also on the menu at 5,80 €, as well as an organic lemonade (4,50 €) or Alain Milliat fruit juices strawberry or peach (5,80 €).

We tried it and it’s a wholehearted recommendation: the mochi cookie dough is a true knockout. The silky envelope of glutinous rice dough hides a raw chocolate cookie dough from Barre Clandestine, egg-free for health reasons, yet utterly melt-in-your-mouth. It’s the kind of bite you didn’t see coming and it becomes the undisputed favorite of the tasting. A pinch of flaky sea salt in the dough wakes everything up and brings the flavors into perfect harmony.
Our other favorite? The black sesame cookie, Marine Zerbib's signature for the occasion, with a surprisingly deep aroma. It must be said that Agathe makes her own homemade black sesame paste, which gives it far more pronounced flavors. While several tasters loved the matcha-chocolat blanc cookie, we found it a touch too sweet. So best left for those with a sweet tooth.
Marine Zerbib didn’t take the conventional path to pastry. After an early career in humanitarian work, she answered, more than a decade ago, to a personal calling. Trained at the ENSP, Alain Ducasse’s pastry school, she refined her craft with Christophe Felder and Camille Lesecq, before joining marquee houses: Les Étangs de Corot, Frenchie (where she becomes executive pastry chef) and Pierre Hermé. Her signature product? The cookie, outwardly simple, yet endlessly versatile. Now a consultant, she shares in her workshops her deep conviction that pastry is one of the few métiers whose sole purpose is simply to please.
This pop-up tea salon will run on April 17, 18 and 19, 2026, from 2:00 PM to 6:30 PM, at 13 bis rue Saint-Maur, Paris 11th arrondissement.
