There are places that, once summer arrives, simply slide a handful of new dishes onto the menu. And then there’s the Bvlgari Hotel Paris, which quite literally relocates the vibe. With L’Estate Italiana, the palace wafts in a dose of dolce vita along Avenue George V and reimagines its terrace as a Transalpine retreat where you slow down to lunch, raise a glass, and share, Italian-style.

At the heart of this summer interlude, Pier Daniele Seu’s Pizza Bar sets the tone. The prodigy of roman pizza, crowned Pizza Chef of the Year by 50 Top Pizza and at the helm of the indispensable Seu Pizza in Rome—one of the most closely watched dining spots right now—lands at the Bvlgari Bar for the sunny season, offering eight gastronomic creations served from noon to 11 p.m. His dough is treated with the seriousness of haute culinary fashion: nearly thirty hours of maturation to achieve a light, airy texture that frames recipes ranging from classics like the Margherita DOP to more contemporary takes such as Indiavolata, Formaggi e Limone, Variazione di Zucchine, or Cocktail di Gamberi. In the glass, Franciacorta Bellavista cuvées extend the textural play, culminating in the Spuma di Frutta signature cocktail, where Italian bubbles meet blackberry, strawberry, raspberry, and basil. Pizzas are priced between €36 and €58.

At the hotel entrance, a traditional carrettino signals the next stop on this gourmet journey. Spearheaded by Michelin-starred chef Niko Romito, Il Gelato celebrates Italian ice cream in its most authentic form. Available from 12:00 to 18:00, gelati, sorbetti and granite are crafted from fresh milk and natural ingredients, with little sugar and no artificial flavors. Flavors such as chocolate, pistachio, hazelnut, raspberry or lemon with basil make up a Mediterranean-leaning menu, sometimes paired with a Sicilian brioche scented with citrus zest. Expect €12 per flavor, €15 for two.
