Bidoche: the butcher shop that hides a meat restaurant in Paris

Vegetarians, pescetarians and vegans, please refrain! As its name suggests, Bidoche celebrates the finest meats from France's carefully selected terroirs with an original concept: a restaurant hidden behind a butcher's shop!

Some restaurants are truly worth a visit. Bidoche is one of them. Nestled on the trendy Rue Jean-Pierre Timbaud in the 11th arrondissement, this place may surprise you at first glance. And with good reason: when you arrive at No. 7, you find a butcher's shop with a charcuterie corner on one side and a display case showcasing several beautiful cuts of meat (beef, veal, lamb, pork, and chicken) on the other. Behind the counter is the very friendly and passionate Alexandre de Toulmon.

After several years in finance, this farmer's son finally decided to change careers and turn to the world of butchery. In September 2017, he finally opened his establishment with a strong concept: offering a high-quality neighborhood butcher shop on the street and, just behind it, slightly hidden, his restaurant!

We head down this small corridor to discover the restaurant area, which seats no fewer than 30 people.

With its blue walls and red curtains, it feels like something out of a David Lynch film. But we have indeed taken our seats at Bidoche, the new culinary hotspot in the 11th arrondissement that is not to be missed.

In addition to offering a strong concept and a warm and friendly atmosphere, Alexandre serves up delicious cuisine. Unsurprisingly, meat is the star of the show here. The menu is divided into several sections. First, there is the excellent and generous charcuterie platter, selected by the butcher, which can be shared between two to four people. That evening, Alexandre offeredGuémené andouillette sausage, thin slices of ham, goose rillettes, and garlic sausage, all at a more than affordable price: €9 per plate!

There are several options for main courses: the dish of the day, a vegetarian steak, or the famous Bidoche platter, a selection of 300-gram cuts of beef to grill for €24.

But most customers come to Bidoche to try the pay-by-weight option. How does it work? Alexandre will come and collect you and take you to the butcher's section so you can select your cuts. Sold by weight, they are then taken to the kitchen, grilled, and served at your table with unlimited side dishes (glazed vegetables, fries cooked in beef fat, and seasonal vegetable purée) and a choice of sauces (homemade chimichurri, Paloise, or Bleue).

When it comes to meat, trustAlexandre's expertise. He will guide you perfectly and steer you towards the right cut. Between explanations, he tells us that he selects his meat with respect for the animal and quality in mind, sourcing from the best farms in France. For example, you'll find Pré Salé lamb from Mont Saint-Michel, as well as Bazadaise and the famous Limousine.

For my part, I am tempted by a beautiful piece of Périgord pork chop, while my companion opts for a piece of leg of lamb and a tournedos fillet.

Our taste buds are quickly awakened! Perfectly grilled and seasoned just right, the meat speaks for itself. With such high quality, there's no need to add anything else!

And you only have to look around to see that the concept is a hit. The restaurant is full. At Bidoche, customers come and return in search of quality meat and a friendly atmosphere that quickly won over carnivores looking for an authentic and original place to eat.
