After the cookie dough bar and the many other gourmet concepts that have sprung up in Paris over the last few years, here's a new place that's also likely to be a big hit. What's it called? BAB. Described as the very first Brioches bar in Paris, this new concept is the brainchild of warm-hearted and passionate Margaux Aycard. After graduating with a double degree in French cuisine and pastry from the Ferrandi culinary college, Margaux took over the kitchens at the " 52 Faubourg " restaurant in Paris in 2017. But the desire to launch her own business was stronger. So, in autumn 2019, Margaux gave birth to the capital's first Bar à Brioches.
Once inside, it's hard to resist BAB's many tempting offerings. Behind the small counter, you'll discover several brioche references, both sweet and savory, braided and flaky... all homemade, of course, in the basement laboratory.




Among the bestsellers, of course, is the famous and inescapable sweet brioche from Normandy! You'll also love the delicious 'Cinamon Roll', the Scandinavian cinnamon roll, or the'Kanelbullar', a classic that's always travelled and seduced. BAB also offers 'Babka', a brioche of Ashkenazi origin, as well as 'Queen aman', inspired by Kouign Amann, and ' Cookie Dough'.
On the savory side, let yourself be tempted by brioches with bacon/maple syrup puff pastry, cheddar cheese or mushrooms.
BAB also offers sandwiches based on brioche bread, such as the highly acclaimed 'Croque Truffe' with parmesan béchamel, beef ham and truffled mushroom filling.
Because BAB aims to be eco-responsible, Margaux has chosen to use recyclable and biodegradable packaging, as well as 99% French products, with raw materials most of which come from French organic farming. Note also that the unsold brioches of the day are reused to create the brioche perdue!




Available to eat in or take away, Monday to Friday from 8am to 5pm, these brioches and brioche sandwiches are accompanied by coffee, in partnership with the roaster 'Fève', tea and infusions in collaboration with 'Herbonata', a herbalist's shop in the Paris region, or delicious homemade fresh juices, with no added sugar or water.
Margaux has no shortage of ideas for BAB, and may well open other locations in Paris... a gourmet concept that will continue to surprise and delight our taste buds!
