Easter 2022 is just around the corner, and it will be soon time to indulge to an avalanche of chocolates, praline eggs, bunnies, hens, cheeky entremets and hearty cakes. At Le Cheval Blanc, the paschal season is also celebrated with delicacy and fineness, with a special teatime.
Available all April long, Le Cheval Blanc 2022 Easter teatime created by the famous pastry chef of the hotel, Maxime Frédéric, is actually a re-reading of the traditional teatime, but chocolate version. Let us reassure you right away, 100% chocolate does not mean it will make you sick or it will be too sweet, this is definitely not worthy of Maxime Frédéric’s incredible achievements!
But, cakes and pastries are adorned with chocolate elements, like some mousse or some crunchy shell to celebrate Easter as it should be. Past the fabulous and very fresh savory bites – vegetable crunch; snow pea/fresh goat’s milk cheese cream tartlet; asparagus-poached quail egg-Hollandaise sauce gougère – discover the sweet part likely to please connoisseurs.
Starting with the small-sized pastries, just to whet your appetite: chocolate-strawberry (with a real taste of strawberry) puff pastry; comforting macaron flavored with hazelnut and tonka bean rum syrup-infused banana; light puffed chocolate and salt flake tart; or chocolate and mandarin tartlet, what a wonderful pairing.
It is now time to discover the famous cakes inspired by French regions revisited for Easter, chocolate style, then. Placed on a majestic tree-shaped tiered tray, cakes parade. Annecien namely some Savoy cake crunchy on the outside, smooth on the inside; light cheese cake from Alsace with chocolate glazing, chocolate Parisian flan…
As for us, we got the tarte au sucre from Hauts-de-France, perfectly brioche and served lukewarm, for the chocolate and caramel stay nice and soft; and the chocolate-vanilla marble; two wonderful creations pairing some delicious genmaicha tea.
For a beautiful finish, have the two plated desserts, both very delicate. On one hand, the profiteroles to die for, on the other hand, the Douillon, namely a pear baked in puff pastry, served with a ladleful of raw Norman cream.
Dear sweet-toothed readers, do not wait too long, Le Cheval Blanch chocolate teatime is only available in April, and it would be such a shame to miss it, for sure!
