The philosophy of the founders of this hot spot in the République area was simple: sourcing all the products available on the menu themselves. All in all, Florent Piard, the manager and supported by four of his friends, Clément Desbans, room manager, and Yannick Laurent, the chef who trained at Loiseau Rive Gauche and Les Orchidées, have take about a hundred suppliers on, they’ve selected for the quality of their products and their sustainable and responsible approach. In September 2019, the dream team does it again by opening a new Parisian table and still in the 10th arrondissement.
Named L’Avant-Poste, this new restaurant – with country house vibe – will serve quality products (mussels from the Ile de Groix, Froment de Léon butter…), “directly selected with over 300 farmers, market gardeners and wine makers”.
Reworking all the products as soon as they’re delivered, restaurant L’Avant-Poste aims at making us live a wonderful travel around sharing flavors and knowledges.
