Fabula, Thibaut Spiwack’s ephemeral restaurant at Paris Musée Carnavalet

Fabula, here is the name of Top Chef France contestant Thibaut Spiwack’s ephemeral restaurant settling from May 6, 2022 to October within the Musée Carnavalet.

Musée Carnavalet ’s restaurant and especially temporary terrace is opening for a new season. Remember, last year, the bubbly Chloé signed the menu of the Jardin d'Olympe, serving sustainable and eco-friendly food.

This year, let us welcome Top Chef France 2022 contestant Thibaut Spiwack who created Fabula which experience promises timeless moments. Spiwack is the contestant rewarded with a Green Michelin Star for his restaurant Anona, the prize rewards restaurants and chefs committed to ethic and environmental standards.

For all those who were sad to see him gone after last night’s episode, note you can enjoy his cuisine from May 6, 2022, at the Musée Carnavalet. As you can guess, Fabula will treat you to sustainable food. On the menu, hearty dishes served on lovely plates mostly filled with produces from Île-de-France.

The idea is to serve local produces from short-system delivery: Parisian ricotta gnocchi, brunt eggplant, cumin crackers and arugula pesto, stone bass ceviche, peach and tarragon leche de tigre, raw zucchini, Norman beef gravlax and cognac, turmeric and cider mussels, broccoli and horseradish mash… Here are some of the dishes you can enjoy. They are all to be discovered in the evening, in the fabulous courtyard of the renovated garden.

Moving on to bar and drinks, you are not left out either since iconic Nico de Soto – named 2014 best French bartender – signs the list of summery, delicate and complex cocktails with or without alcohol. With Spiwack, they created a menu that can be paired to make you enjoy a moment untouched by time. On the menu then, 8 cocktails including Tequila, snow pea, peach, lime, egg white and absinthe in one, Aperol with bee pollen, mezcal, truffle honey, fresh yellow lemon juice and champagne in the other, or re-visited classics.

There is no doubt Fabula will be the place to be this summer for small or larger pre-dinner drink parties, sustainable diners and atypical nights out. Imagine soft lights, beautiful fabrics and natural colors, and you get the spirit of the restaurant.

Spiwack’s cuisine and especially at Fabula is to be discovered in the evening, but throughout the day, a snack offer is available from 10 a.m. to 6 p.m., in self-service, as provided by No More Penguins.
