If you're a fan of Levantine cuisine, here's a new spot to discover! Introducing Kébi, a brand-new restaurant-bar dedicated to Kebbeh revisited in all its guises. Head to the Marais to discover this ultra-gourmet address that's just arrived in Paris!

Paris is at the crossroads of gastronomy from all over the world. Strolling through the streets of the capital, you can take a gustatory journey at any time through addresses that are the standard-bearers of the iconic or little-known culinary specialties of the countries they represent. Today, it's time to delight lovers of Levantine cuisine with the discovery of an original resto awaiting you in the Marais district.

Welcome to Kébi, a restaurant which, as its name suggests, specializes in Kebbeh. This Levantine specialty was originally made with meat and bulgur. It takes the form of an elongated dumpling, similar to a rugby ball, and can be found in most Lebanese restaurants.

But if Kebbeh is such a common specialty in the capital's good Levantine restaurants, what makes Kébi so unique? Quite simply, this spot is totally dedicated to this mezze, which it revisits in an original way. So don't expect to enjoy the traditional Kebbeh at Kébi. Ideally located just a stone's throw from the Place des Vosges, Kébi offers us Kebbeh in all its forms, with recipes each as different and gourmet as the next, each time celebrating the encounter between the West and the Levant.

"With Kébi, we want to help as many people as possible (re)discover a traditional cereal from the Levant countries, and imagine all the possible combinations to make it a modern and universal trendy dish". That's how Marc Naaman describes the concept he has come up with, which is sure to tempt the taste buds of many a gourmet in need of something new.

On the menu? Vegetable-based recipes, such as butternut kebi, as well as various meats, including the tasty duck kebi with foie gras, dates and walnuts, onions and sage. We also love the fish and shellfish kebis, with raw tuna, ginger and peas on one side, and the excellent squid kebi with curry, peppers, eggplant and pistachios on the other. A pure delight that takes us straight to the Mediterranean! In all, no fewer than 8 kebis are available to share or not, served in beautiful Ottolenghi plates!

The tasting continues with the main courses, in which, once again, kebbe is in the limelight, reinterpreted in an original and always mouth-watering way. Our favorite is kebbe in lentil salad with kohlrabi, tomatoes, mushrooms and mint, with a tasty pomegranate molasses vinaigrette. Fragrant and delicious, a dish to be savored without moderation!

For carnivores, opt for the generous plate of beef tartar-style kebi, served with home fries and salad. Here again, originality is the order of the day, and the reinterpretation is perfectly mastered and truly successful! Another unusual creation? The chicken kebi; a club sandwich where the bread is replaced by... kebbeh.

And because Kébi pushes the concept to the limit, kebbeh can also be enjoyed in a sweet version with regressive notes of banana, cinnamon, dark chocolate and roasted hazelnuts. Alternatively, opt for the succulent boulgour au lait with pears and saffron. A real treat to end your meal on a high note!

To accompany all this, Kébi boasts an extensive wine list, featuring both French and foreign wines. We particularly recommend the white wine from the Baal Bekaa estate in Lebanon. There are no fewer than 7 cocktails on offer, including the floral " Rose arak " (aniseed-flavored arak alcohol and rose syrup), the " Beetroot mojito " (rum, lemon juice, beet and mint) and the " Orange blossom old fashioned " (Bulleit rye, honey and orange), not forgetting mocktails such as the " Basil Honey lemonade " (basil, lemon juice, honey and still water).

To top it all off, Kébi will soon be opening a street food corner next to the restaurant. Fans will be able to find takeaway kebis, with a choice of ready-made recipes from which to pick and choose, or recipes they can make up themselves just in time!
