Lilian Douchet, who you followed in Top Chef 2022, has just opened his contemporary bistro in Paris called Dame Augustine. We went to discover this new spot that does not lack charm. Divine cocktails, dishes at the top (chef) which wants to be affordable, greedy and without fuss.

Alert to fans and people looking for something new, Lilian Douchet, Top Chef 2022 candidate, has opened two restaurants, one in Bordeaux and one in Paris. Dame Augustine is the name of this new Parisian restaurant which is located on avenue des Gobelins in the 13th arrondissement.

A nice revenge for this chef whose story had moved us. Indeed, if you followed the 13th season of Top Chef, you know that this Beauvaisian had to abandon his restaurant created during the pandemic. Bad timing for this entrepreneur who was forced to become the manager of a department store instead.

Lilian Douchet, who was initially eliminated in episode 9 of Top Chef only to come back like a clock in episode 10, finally left the Top Chef adventure in episode 13. However, the story goes on for this talented chef who was able to arouse our taste buds during the season.

It must be said that this candidate did not come from nowhere. He has indeed made his debut in beautiful starred houses such as Paloma, La Truffière and has officiated as a sous chef in the Georges V. It is thanks to his TikTok account under the pseudo Doudou kitchen where he shares his know-how and his beautiful ideas in the kitchen that he is noticed by the M6 team which then offers him to join the contest .

The restaurant-tea room, opens on two floors with a large terrace in front and has around 70 seats. Light colors, wood everywhere, we are in a relaxed and modern atmosphere.

Gourmet, balanced and natural while being sophisticated, this is how Lilian Douchet sees his Dame Augustine which embodies the image of his new Parisian address. On the menu, French products and short circuit are favored. A nice cellar with wonders of independent wine growers awaits you.

So, let's get back to the point, what does Dame Augustine offer us in Paris? The chef unveils a creative and seasonal menu at an affordable price, the main aim of which is to please. And indeed, it is an affordable bistro table that reveals itself to us. The chef tells us that we are not in a bistronomic restaurant looking for the star but a contemporary bistro where we come to eat well and enjoy ourselves. Thus, every lunchtime, you can taste menus that remain affordable: a menu at 26€ starter + main course or main course + dessert and a menu starter + main course + dessert at 34€.

In the evening but also at lunchtime, you can opt for the menu called in 3 times at 46€ which includes a starter, a main course and a dessert. So we left on the discovery of the delicious Burrata Beetroot in sorbet and julienne, accompanied by a pesto of mint / basil and a raspberry vinaigrette. Smooth and tangy, the burrata is a perfect match for the beet, and the pesto brings it all to life. Add to that the crunch of the almonds and we are at the top (or at the Top Chef).

We also enjoyed the Tender Egg, a low temperature egg with smoked haddock on a bed of celery and garnished with diced parmesan and crunchy tarragon.

We then went on to the"Generously lean", a filet of lean fish cooked a la plancha with roasted eggplant in miso, eggplant caviar, spinach in hazelnut butter with an emulsion and roasted hazelnuts. A perfectly cooked fish, crunchy, crispy and very tasty, a superb discovery that we recommend.

Let yourself be tempted by the Steack Aubergine. An ultra gourmet eggplant that offers all the flavors of eggplant. Smoky, melting, crispy, the whole decorated with tzatziki and piperade condiment, we love it.

To finish, we have the fruity unstructured cheesecake which offers us a nice duo of fresh strawberries and candied rhubarb accompanied by strawberry sorbet, cheesecake mousse and Japanese basil.

In short, a very nice discovery to try. Note thatthe restaurant is open from 11:30 am to 11 pm, from Tuesday to Sunday. For lunch from 12 to 2:30 pm, to taste fresh nectars and other house cocktails but also sweet delicacies for the afternoon snack from 2:30 to 7 pm, then for dinner from 7 to 10:15 pm, last order. The little mouse even tells us that an affordable tea time at 18€ is under consideration...
