Xavier Pincemin, winner of Top Chef 2016, is opening 'Encore.', a new street food restaurant in Paris's 16th arrondissement, a stone's throw from the Parc des Princes, at the end of this year. We'll tell you everything.

Xavier Pincemin continues his culinary journey by openingEncore., his first fast food restaurant located at 214 avenue de Versailles, a stone's throw from the Parc des Princes in the 16th arrondissement. The chef has never hidden his love of street food, and this time he is bringing to fruition a project that has been on his mind for some time: offering gourmet cuisine that is accessible toas many people as possible, designed for delivery andtakeaway. And as for the location, we love the nod to Versailles, his hometown, where he already owns two restaurants, Le Pincemin and Le Lafayette.

With Encore., Xavier Pincemin wants to make the cuisine that made Lafayette, his Michelin-starred restaurant with its Art Deco dining rooms and menu that blends influences from around the world, more accessible. The name is rather apt, too: Encore., as in when you always want more.

Note that this isn't his first venture into the world of burgers. In 2023, he created the recipes for Jefe Burger with rapper Ninho, also in the 16th arrondissement. The following year, in May 2024, he unveiled a pop-up street food restaurant in the 10th arrondissement that took us on a journey from Paris to Seoul via New York. All these experiences have allowed him to refine his concept and work on the recipes that will make up the Encore menu.

The chef travels extensively to find the gems that are missing in France. Tokyo, London, New York... He observes, tests, and draws inspiration. His idea? To create fast food that mixes many different influences, because he understands that this is exactly what the new generation is looking for. So we can expect well-crafted burgers made with quality ingredients, in line with what he already offers at Lafayette, where you can find good meat.

Xavier Pincemin's career is worth a detour. Born in Versailles, he climbed the ranks in the kitchens of the Trianon Palace before winning Top Chef in 2016. Named Young Talent by Gault & Millau in 2019, he opened Le Pincemin, his first gourmet restaurant, which was also mentioned in the Michelin guide that same year. Today, he is a hit on social media with millions of views on his videos, appealing to both foodies and fans of street culture. This opening near the Parc des Princes, in a lively neighborhood, should appeal to locals as well as foodies looking for a quick, affordable, and tasty meal, who come from all over, for a soccer game for example.

If you're looking for a great burger or fast food spot created by a chef who never compromises on quality, make a note of the address: 214 avenue de Versailles, in the 16th arrondissement. Encore. is set to open by the end of the year. To keep up with the chef's latest news and make sure you don't miss the opening, visit Xavier Pincemin's official website. In short, we can't wait to find out what the chef has in store for us.
