Michelin Guide 2022: “Green star” restaurants rewarded for their eco-friendly approach

Complying with the earth, seasons, animals, as well as working for a better diet… The Michelin Guide now rewards sustainable restaurants committing to ethic and environmental innovations. Here are the latest “Green Star” restaurants of the 2022 Michelin Guide!

It has been two years since the Michelin Guide has been rewarding restaurants committed to a sustainable approach of gastronomy with the Green Michelin Star.

Local produces in short-delivery system, plant-filled terrace, permaculture kitchen garden, composting organic waste, package-free produces, absolute seasonality of vegetables, picking in the wilderness of woods, micro-filtered water… As many commitments made by restaurateurs echoing with our time (and necessary awareness about ecology!), now rewarded by the famous red guide.

Last year, 33 restaurants were given the Green Star reward, being added to the 49 restaurants already rewarded in 2020. Among the Parisian chefs, let us name Thibaut Spiwack (Anona), Bertrand Grébaut (Septime), Bruno Verjus (Table), or even Simone Zanoni (Le George). Note this reward does not the stars traditionally given by the Michelin Guide, but can be added to those!

The Michelin Guide has just revealed – this Tuesday March 22, 2022 – the list 2022. The occasion to discover new Michelin-starred restaurants in Paris, as well as new “Green Star” eateries.

This year, the red guide has rewarded no restaurants in Paris, but has for 6 restaurnats in France: Domaine Riberach - La Coopérative in Bellesta, Toya in Faulquemont, La Table de la Butte in Plouider, La Table du Gourmet in Riquewihr, Les Belles Perdrix de Troplong Mondot in Saint-Émilion and Auberge Sauvage in Servon.
