Michelin Guide 2024: "Green Star" restaurants rewarded for their ecological approach

Respect for the land, the seasons and animals, but also a commitment to better nutrition... The Michelin Guide now rewards responsible restaurants that make sustainable commitments based on ethical and environmental innovations. Discover the new "Green Stars" restaurants in the Michelin Guide 2024!

For the past four years, the Michelin Guide has been rewarding restaurants committed to a sustainable approach to gastronomy, with the Etoile Verte Michelin award.

Local produce, planted terraces, permaculture vegetable gardens, composting of organic waste, products bought without packaging, absolute seasonality for vegetables, picking in nature and the woods, micro-filtered water... These are just some of the commitments made by the restaurants, which resonate with the times (and a necessary ecological awareness!), and which are now being promoted by the famous red guide.

Last year, 8 restaurants received the Etoile Verte award, including two in the Paris region: Le Doyenné in Saint-Vrain (91) by chefs James Henry and Shaun Kelly, and Ruche in Gambais (78) by chef Cybèle Idelot.

Other Parisian chefs to have won this distinction over the years include Thibaut Spiwack(Anona), Bertrand Grébaut(Septime), Bruno Verjus (Table) and Simone Zanoni(Le George). Note that it does not replace the stars traditionally awarded by the Michelin Guide, but can be added to them!

On Monday March 18, the Michelin Guide unveiled its 2024 ranking. An opportunity to discover the new starred restaurants in Paris, as well as the new "Etoiles Vertes". This year, the red guide has rewarded 9 restaurants, including 1 in Paris: Le Bellefeuille.

The other winners are : Les Jardiniers (Ligré), La Cour de Rémi (Bernicourt), Domaine du Châtelard (Dirac), L'Art de vivre (Narbonne), La Galinette (Perpignan), En pleine Nature (Quint-Fonsegrives), Le Saint Hilaire (Saint-Hilaire-de-Brethmas) and La Bastide de Moustiers (Moustiers-Sainte-Marie).
