We were lucky enough to taste this luminous creation, and particularly appreciated the freshness provided by the citrus fruit. Chef Nicolas Guercio finds the right balance between acidity and bitterness, making this log both accessible and pleasing. If you like lightness, the rather generous mousse should delight you. We lacked a bit of chew to bring more contrast to the palate, but the whole remains very well balanced and should make a sensation in the middle of your festive table.
