Today, three-star chef Yannick Alléno reveals the secrets of his porridge recipe that he serves at the Royal Mansour Marrakech, for a breakfast that combines pleasure and health.

Enhanced withfresh oranges, almonds and dates, and delicately scented with orange blossom, this tasty oatmeal porridge is rich in fiber and vitamins, perfect for starting the day!

Yannick Alléno's porridge recipe

For one person

Ingredients:
- 60 g of rolled oats
- 440 g of whole milk
- 34 g of orgeat syrup
- 160 g dates (preferably Mejhoul dates)
- 20 g slivered almonds
- 1 orange
- juice of 1 orange
- 1 tablespoon of orange blossom water
- 15 g of sugar
- A pinch of salt

Preparation:

Remove the skin from the dates and cut them into small cubes.

Cut the oranges into segments.

Roast the slivered almonds in a pan over medium heat until golden.

Heat milk in a saucepan.

Add orgeat syrup and sugar.

Bring to a boil and simmer over low heat, stirring, for 4 to 5 minutes until smooth and thick.

Add a pinch of salt and remove from heat.

Add orange juice and orange flower water.

Serve warm or cold and garnish with dates, orange segments and toasted almonds.
