Now, they’re back under a new name, in a neighborhood more vibrant than ever, offering a refined experience with a carefully curated sourcing process that elevates their craft to new heights.
The Vietnamese coffee is quite the surprise. Vietnam may be the world’s second-largest coffee producer, primarily known for its robusta beans, but the country’s coffee scene is far from monolithic. At Maison Phê, Nam goes beyond the usual menu: he personally sources his beans from small local farmers and roasts them in Paris. This rare artisanal approach allows him to offer filter coffees and single-origin espressos that you won’t find anywhere else in the capital.
One of the unique offerings on the menu is the Liberica, a coffee variety that makes up only about 2% of global production, far behind the more common Arabica and Robusta. This particular batch is grown in Quảng Trị, in central Vietnam. When sipped, it initially reveals subtle animalistic notes, followed by spicy aromas reminiscent of jackfruit. The resulting brew is a bright, slightly tart brown with minimal bitterness, low in caffeine, and incredibly enjoyable to drink. It’s a flavor profile that specialty coffee enthusiasts will find hard to come across elsewhere in Paris.
Beyond its stylish décor, the menu ventures into lesser-known Vietnamese delicacies for the French palate. The Pandan latte, crafted with a shot of house-made espresso, blends coconut and pandan flavor in a cup. On the taste buds, it almost leans toward pistachio. A delightful surprise for those who think they've sampled everything there is to offer in Parisian coffee shops.
The cà phê muối, or salted coffee, is a specialty from central Vietnam. Made with cream, condensed milk, and a touch of salt, it’s a boldly indulgent drink that leaves you wide awake and ready to take on the day. And of course, the perennial favorite cà phê sữa đá, Vietnam’s iconic iced coffee with condensed milk, remains a must-try for purists.
To complement all these treats, the café offers a selection of thoughtfully crafted sweets. The matcha and chocolate cookies — made with Vietnamese matcha, please — and the cassava cannelés, which are delightfully crispy, caramelized, and have a subtle chewiness, are little delights that you can't help but fall for.
