Recipe for leeks with citrus vinaigrette by Flore Granboulan

Ingredients:
1 leek
1 orange
1 lemon
A little dill
1 teaspoon of mustard
1 pinch of ground pepper
2 tablespoons of olive oil
1 endive - in this case, carmine endive

Preparation:

Plunge the cleaned and halved leek into boiling water.

Prepare the vinaigrette: zest half of the orange and half of the lemon, add the ground pepper.

Then add the juice of half the lemon, the juice of half the orange (keep the other half of the orange for the dressing).

Finally, add the mustard, olive oil, mix and set aside.

Dressing:

Cut the stem of the endive and separate the leaves. Chop the dill finely. Peel the orange and separate the orange segments.

Season the leeks with the vinaigrette, then the endives with the dill.

Arrange the endives, leeks, oranges and it's ready to eat!
